Made In Chicago: Gotham Greens

CHICAGO (WBBM Newsradio) — An agriculture company based on Chicago’s South Side is growing organic greens on a large scale.

Gotham Greens has 175,000 square feet of greenhouse space in Pullman that allows the company to grow lettuce and herbs year-round.

“What we’re doing is called controlled agriculture,” explains Chief Greenhouse Officer Jennifer Frymark. “We are using greenhouses and hydroponics, and the focus for us is really on growing a lot more with less.”

That means less need for chemicals and water and less time to get its products to stores and restaurants.

“We can harvest it and get it to you the next day,” Frymark said. “It’s so fresh by the time you get it home that it still just has the most amazing crunch, flavor, all the nutritional benefits. And it lasts a couple of weeks in your fridge.”

She said Gotham Greens enjoys being in the Pullman neighborhood, where similarly minded sustainable companies are located.
